2 oz fresh basil
1 pint grape tomatoes
1/4 cup black sesame seeds
Bottled balsamic glaze, as needed
Wooden cocktail skewers, about 20 to 25
Skewer a watermelon cube, then a basil leaf, followed by a grape tomato.
Sprinkle finished skewers with black sesame seeds.
Serve with balsamic glaze for dipping.

Makes 5 cups, not including romaine | Ready in 20 minutes
INGREDIENTS
1 onion, diced (6 oz)
1 cup corn*
4 garlic cloves, minced
1–2 tablespoons chili powder
½ tablespoon ground cumin
1½ cups cooked black beans (15-oz can, drained and rinsed)
1½ cups cooked pinto beans (15-oz can, drained and rinsed)
15 oz tomato sauce, no salt added
¼ cup fresh cilantro, diced
1 tomato of your choice, diced
1 head romaine leJuce, chopped (keep cold in the fridge until needed)
1 lime, juiced
ACTION STEPS
1. In a large skillet or medium saucepan over medium-high heat, add the onion and corn. Cover and sauté for a couple of minutes. Add garlic, chili powder, and cumin. Sauté for a few more minutes, or unKl the onions become translucent. Stir occasionally.
2. Add the beans and tomato sauce, stir well and replace the lid. Cook for a few more minutes until the sauce is simmering and the beans are hot.
3. Turn off the heat and stir in the cilantro, fresh tomato, and lime juice.
4. Plate the chilled chopped romaine on individual plates. Pile a couple of scoops of the enchilada mix (around 1 to 2 cups) over the greens. Garnish with extra cilantro.
CHEF’S NOTE
For better and more authentic flavor, grill or roast the corn on the cob, and then slice off the corn kernels. I love the hot-cold contrast of the warm beans and veggies over the cold romaine. However, this salad is delicious when the enchilada mix is served chilled as well.
Outrageous Chocolate Chip Cookies
Mediterranean baked sweet potatoes
Whole 30 Fish Taco Bowl (Paleo Friendly)
Avocado Chips
Mash and mix together
1 large avocado
3/4 grated Parmesan cheese
1teaspoon lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon Italian Seasoning
Dash salt and pepper
Line baking sheet with parchment paper,
Put Tablespoon or a bit larger size dollop of avocado mixture on sheet, flatten, 3 inches apart
Bake 325 degrees until golden, about 3 inches apart
Butter Burgers
Mix Together first 3 ingredients
1 lb Ground beef
1/2 teaspoon salt
Dash salt & Pepper
Grease mini muffin tin
2 Tablespoons cold butter cut into 20 small pieces
2 oz cheese, cut in 20 small pieces
Press 1 Teaspoon of beef mixture in the bottom of each muffin cup, place a little piece of butter on top, place 1 teaspoon of beef mixture on top, place one piece of cheese on top, press 1 teaspoon on top—in each muffin cup.
Cook 375 degrees about 15 minutes until done

Pineapple Coconut Chicken Tenders
Pineapple juice – enough to cover chicken tenders
Chicken tenders – as many as you want
1 or 2 eggs, beaten – enough to dip tenders in
Unsweetened coconut flakes
Ground flax seed – about half as much as the coconut flakes – give or take
Onion powder – as much as you want – 1 tsp or so
Garlic powder – as much as you want – 1 tsp or so
Marinate chicken tenders in pineapple juice over night
Mix together coconut flakes, ground flax seed, onion powder and garlic powder on plate
Tenders – throw out pineapple juice.
Dip tenders in egg – coat well
Roll tenders in coconut/flax/onion & garlic powder mixture
Coat well
Cook – in Air fryer
Place on plate, and put in freezer 2 – 3 hours.
about 300 degrees for 10 minutes, turn tenders over and cook 300 degrees for 10 minutes
Cooking time may vary – just don’t cook to high heat to long or they will dry out
Cook in frying pan –
Heat favorite oil – butter, ghee…
And toss in tenders, cook ‘til done
Chicken Tenders Parmesan
Similar to recipe above,
But
Coconut Aminos – just a bit – to drizzle over tenders
Chicken tenders –as many as you want
Grated Parmesan cheese, kind of a lot (could do a mix of Parmesan and Romano)
Ground Flax seeds
Onion powder
Garlic powder
Optional
Dries Basil, Pork Rinds or very fine bacon bits
Drizzle (not soak) tenders with Coconut Aminos – marinate over night
Mix cheese, flax, onion and garlic powder – and any optional additions on plate
Dip tenders in eggs
Roll in Parmesan, flax, onion, garlic mixture
Mix together Parmesan cheese, ground flax seed, onion powder and garlic powder on plate (and any optionals)
Dip tenders in egg – coat well
Roll tenders in Parmesan /flax/onion & garlic powder mixture
Coat well
Cook – in Air fryer
Place on plate, and put in freezer 2 – 3 hours.

Multi Chip Cookie Recipe
1 cup butter (soft)
1 cup crunchy peanut butter
1 cup sugar
2/3 cup brown sugar
2 eggs
1 tsp vanilla
1 cup old fashioned oats
2 tsp baking soda
½ tsp salt
2/3 cup milk chocolate chips
2/3 cup semi-sweet chocolate chips
2/3 cup peanut butter chips
2/3 cup vanilla chips
2/3 cup butterscotch chips
Cream butter, peanut butter and sugars in a large mixing bowl. Add eggs – mix well. Add vanilla, flour, oats, baking soda and salt. Add chips.
Drop tablespoons of cookie dough onto ungreased baking sheet, about 2 inches apart.
Bake at 350 for 10 – 12 minutes, until golden, Cool and eat
Sugar Cookies
2/3 cup shortening
3/4 cup granulated sugar
1 teaspoon vanilla
1 egg
4 teaspoons milk
2 cups sifted all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
Oven 375°
Thoroughly cream shortening, sugar, and vanilla.
Add egg, beat until light and fluffy.
Stir in milk.
Sift together dry ingredients, blend into creamed mixture.
Divide dough in half, chill 1 hour.
On lightly floured surface, roll to 1/8 inch thickness.
Cut into desired shapes with cutters.
Bake on greased cookie sheet at 375° for about 6-8 minutes.
Cool slightly, remove from pan. Makes two dozen.
Chill other half until ready to use.
Icing
Whisk one 1-pound box confectioners' sugar and 2 tablespoons meringue powder in a large bowl.
Add 5 tablespoons water and beat with a mixer on medium-high speed until soft, glossy peaks form, adding up to 1 more tablespoon of water if needed.
Divide among bowls and tint with gel food coloring as desired.
You'll need two consistencies of icing: For outlining, the icing should be thick and pipable.
For flooding (filling inside the lines), the icing should be the consistency of runny yogurt; thin with more water as needed.
